This wine is fermented in stainless steel and aged on its lees, which gives its high acid, otherwise bone-dry palate a surprisingly dense, creamy texture. It opens with vibrant aromas of lime zest, white flowers, and green apples. On the palate, key lime and unripe pear mingle with a crisp mouthfeel of limestone minerality and a beachy, saline finish. This wine has screaming acidity and reminds me a lot of a Muscadet or Picpoul. Similarly, this wine pairs well with almost any type of seafood, raw (preferred), baked, braised, or even fried. Raw oysters with a mignonette are a match made in heaven.
